Strawberry and Orange Cream Tart

This mouthwatering summer fruit tart, which combines the delicious flavours of strawberries, oranges and almonds is eaten cold, so it's ideal for trips to the great outdoors and is a great complement for the Raised Pork and Pepper Pie with Salsa.
INGREDIENTS
  • 1lb (450g) almond biscuits, crushed
  • 8oz (225g) butter, melted
  • 3 eggs, size 3
  • 4oz (100g) caster sugar
  • 10fl oz (275ml) double cream
  • Juice and zest of 2 oranges
  • 1.5lb (675g) strawberries, washed and hulled
  • 1 tblsp (15ml) orange juice
Preheat the oven to 180 C/350 F, gas mark 4. Mix biscuits and butter and use this to line greased 8in (20cm) tin, chill. Beat eggs, half sugar then cream, juice and zest of oranges. Pour small amount over biscuit base. Add enough strawberries to fill tart, top with more of the mix. Bake for 45 minutes. Chop the rest of the fruit, place in pan with remaining sugar and orange juice. Simmer for 5-8 minutes to thicken. Mash, cool and spoon over tart. Chill.

Serve with fresh cream.
